This was the first time I actually followed this salsa recipe to the T and it was so good! In the past, I let some of the ingredients scare me (I am completely lame and I don't do spicy) so I just omitted them, and it was fine that way too, but I highly recommend you include everything. If I can handle it, you can — trust me. It does has some kick, but it is so flavorful you won't care.
Side note: This recipe yields about four 1/2-cup servings of salsa to serve on the four pieces chicken, but if you're making the recipe for less than four people, only make the amount of chicken you need and make sure you have some chips on-hand to take care of the extra salsa (you should probably have some chips anyway for "testing" too). The salsa keeps well in the fridge for several days in a tupperware as well. I imagine it would be amazing on salad greens too!
One more side note: It can be expensive to buy fresh herbs when you only need such a small amount for a recipe, so feel free to call me and come get some fresh cilantro and mint anytime - we have PLENTY! :)
OK last one, I swear: I was unable to find mangoes anywhere — jarred, fresh, anything (they must be way out of season) — so I substituted a standard-size can (14-15 oz.) of sliced "light" peaches in their own juice.
Jamaican Chicken with Mango (or Peach) Salsa
- Jamaican jerk seasoning
- 4 boneless, skinless chicken breast halves
- 2 Tbs. olive oil
Salsa
- 1/4 cup minced fresh cilantro
- 1/4 cup finely chopped red onion
- 1 Tbs. chopped fresh mint
- 1 tsp. brown sugar
- 2 tsp. fresh lime juice (this equals out to the juice of one lime, pretty much - it was so close I just quartered the lime and squeezed out the whole thing)
- 1/4 tsp. black pepper
- 1/4 tsp. salt
- 1/4 tsp. crushed red pepper (I made great use of a little packet of that crushed red pepper no one likes but the pizza guys always bring anyway from our "saved condiment drawer")
- 1 (16-oz.) jar of sliced, peeled mango, drained and chopped (or 2 cups of diced fresh mango... OR 1 can of peaches - see note above.)
Directions:
- Send a jerk your husband outside to the grill with the jerk seasoning, a plate of raw chicken, a little ramekin of olive oil and a basting brush. He will lightly brush the chicken with the oil and season with the jerk stuff. Or make chicken whatever way you usually make chicken... jerk (sorry, this recipe gives me an excuse).
- Prepare the salsa by combining the cilantro, onion and all that other stuff in a bowl.
- Serve salsa over chicken. We had it with saffron rice and those steam-in-a-bag green beans. Super tasty & I hardly had any dishes to do - WIN!
